Tom (or Thom) Ka Gai

Forget about those other recipes for TKG. This is the one you want.

Tom Ka Gai:

~10 chicken thighs, water to barely cover or a bit less
Boil until tender (30-40min.), remove most of fat

add

3 cans coconut milk
~4 stalks lemon grass cut into 4 inch pieces and partly smashed
~3-4 tbs Rooster garlic hot sauce
juice of 1 lime (large)
~4-6 tbs brown sugar or palm sugar
1 bunch green onions chopped
salt to taste
2-4 tbs grated fresh ginger
1/4-1/6 cup good fish sauce (optional, but better with) - add slowly to rapidly boiling sauce - smells bad!
1 chopped tomato
several chopped mushrooms
Simmer while cleaning up chicken.

Remove bones, fat, skin from chicken (you can do this while sauce cooks) and add to sauce
boil about 1/2 hr.

remove lemon grass stalks, adjust seasoning (Rooster, sugar, salt) and serve

Variation: For more substance, crumble tortilla chips into bowl. This may be sacrilege to purists but it is good and more filling.
